IntroductionI made this recipe up using bits and pieces of other recipes. My six-year old loves it, despite all the veggies I sneaked in there! I made this recipe up using bits and pieces of other recipes. My six-year old loves it, despite all the veggies I sneaked in there!
16 oz. ground beef, extra lean
1/2 chopped onion
1/2 chopped green bell pepper
14.5 oz. can corn, drained
2/3 cup water
taco seasoning packet (40% less sodium)
1/2 cup 2% shredded cheddar cheese, divided in half
6 corn tortillas
14.5 oz. can black beans, drained
14.5 oz. can mild Ro-Tel
2. In a separate bowl, stir together black beans, Ro-Tel, corn, and 1/2 cheese. Tear tortillas into 1" pieces and add to mix. Last, add beef mixture to bean mixture.
3. Spray 13" X 9" baking dish with cooking spray. Spread bean and beef mixture in pan. Cover with foil and bake at 375 for 30 minutes.
4. Remove foil and top with remaining cheese. Cook, uncovered, for another 10 minutes, or until cheese is melted.
Serving Size: Serves 12.
