Cream of Carrot-Cheddar Soup

Introduction

Serve this special soup as an appetizer or as the main course. Just add a salad. Serve this special soup as an appetizer or as the main course. Just add a salad.
Number of Servings: 8

Ingredients

    2 T. Butter
    1/2 c. chopped onion
    1 lb. Carrots, shredded
    1 lb. Potatoes, shredded
    6 c. chicken broth
    1/2 t. thyme
    1 bay leaf
    1/8 t. tabasco
    1/2 t. Worcestershire sauce
    1/2 t. sugar
    salt & pepper to taste
    1 1/2 c. milk
    1 c. shredded low fat cheddar cheese

Directions

Saute onion in melted butter in a large stock pot. Add carrots, potatoes, broth, thyme, bay leaf, tabasco, Worcestershire sauce, sugar, salt & pepper. Simmer till vegetables are tender. Add milk and cheese. Stir until cheese is melted. Discard bay leaf. Serve hot with parsley sprinkled over the top.
