Simple Seven Bean Salad

Introduction

This salad gets better the longer it marinates so allow it to chill in the fridge for at least a few hours - or overnight. This salad gets better the longer it marinates so allow it to chill in the fridge for at least a few hours - or overnight.
Number of Servings: 8

Ingredients

    1 can Six Bean Blend
    1 can low-salt corn
    1 can salt-free cut green beans
    2 roasted red peppers (bottled), chopped fine
    1/4 cup red onion chopped fine
    1 cup broad leaf parsley, chopped

    1/3 cup red wine vinegar
    1/3 cup sugar
    3 Tbsp olive oil
    1 clove garlic, crushed
    1/4 tsp salt
    1/4 tsp pepper

Directions

Thoroughly rinse and drain the beans and corn. Mix together vinegar, sugar, oil, garlic, salt and pepper in a small container with a tight seal. Shake until well combined. Throw everything together in a covered bowl and mix well. Chill at least a few hours and mix well before serving.

Serving Size: makes 8 1/2-cup servings
