Tuscan Pasta Salad

Introduction

The dressing for this salad does not have any oil so if the salad sits the pasta will soak up all of the dressing. Add the dressing and Parmesan immediately before serving. Number of Servings: 6

Ingredients

    1/2 package Wacky Mag Veggie Spirals pasta
    2 bottled roasted red peppers, chopped fine
    1/4 cup sun dried tomatoes, chopped fine
    1/3 cup Renee's Fat Free Tuscan Italian Dressing
    6 Tbsp grated light Parmesan cheese

Directions

Cook and drain pasta according to directions. Rinse with cold water to chill the pasta. Mix everything together and serve immediately.

*If you make it ahead of time or if you have some leftover you can add a Tbsp or two of the dressing to liven it up again.
