Sausage and Greens Soup

Ingredients



    * Swanson Chicken Broth 99% Fat Free, 4 cup
    * Beans, great northern, 2.5 cup or one can
    * *Tomatoes, r canned, diced Italian style, one can, about 2 cup
    * Onions, raw, .5 large , chopped and sauteed in olive oil until fragrant
    * *Italian sausage - johnsonville 2 links, cooked and chopped to bite size pieces
    * *Bok Choy, raw-shreaded or chopped, 2 cup
    * *Mustard or turnip greens, fresh, 8 cup, chopped
    * Olive Oil, 1 tbsp

Directions

saute onions in olive oil in soup kettle. Add broth, beans, tomatos, additional garlic or herbs if desired. I like a piece of hot pepper flakes. Simmer until onions are fully tender. Add the greens and bok choy, continue simmering until all is tender and flavors blend.

Serving Size: makes 6 dinner size servings
