Paleo Sandwich Bread

Ingredients

    1 1/2C Almond Meal
    3/4C Arrowroot
    1T Walnuts
    1T Sultanas
    1/2t Sea Salt
    1/2t Baking Soda
    4 Eggs
    1t Maple Syrup
    1t Lemon Juice

Directions

1. Process walnuts and sultanas until they form a crumb-like mixture
2. Combine with almond meal, arrowroot, salt, and baking soda in a medium bowl
3. In a larger bowl, blend the eggs for 3-5 minutes or until frothy
4. Mix dry ingredients into wet
5. Scoop batter into a well greased and lined 7.5" x 3.5" loaf pan
6. Bake at 350F/180C for 30-35 minutes, or until a skewer inserted into the centre comes out clean
7. Cool and serve

Serving Size: Makes 1 medium loaf, approx. 12 slices
