Introduction

A delicious salad, perfect to take to a picnic or to make for lunch. This recipe makes 1 1-cup serving, as a side dish.

Optional: Add bacon or a protein, like lean chicken breast or tofu.

Ingredients

    1 cup spring mix lettuce
    1/4 cup Athenos Crumbled Feta Cheese
    1/4 Sliced Almonds
    1 T. Wishbone Light Raspberry Walnut Vinaigrette
    1 T. Sliced Green Onions (or scallions)

Directions

Arrange salad mix on a plate or in a small bowl. Drizzle dressing, then top with cheese, onions and almonds.

Enjoy! May be easily doubled for more servings.
