Introduction

I can't believe I've been making this since 1984, but it's that good. It's easy to alter, adding or subtracting serving sizes - I make huge batches, but this is a single serving. It is also incredibly easy to make. The hardest part is seeding and peeling the tomatoes. I can't believe I've been making this since 1984, but it's that good. Number of Servings: 1

Ingredients

    1 large red ripe tomatoes, peeled, seeded, and finely chopped
    2 tbsp sweet onions, finely chopped
    1 tbsp sweet green or red bell pepper, finely chopped
    1 tbsp green chili peppers, finely chopped
    1 tbsp jalapeno peppers, finely chopped
    2 clove of finely chopped garlic
    1 tbsp finely chopped fresh cilantro
    Juice of 1/4 lime

Directions

1. Stir all ingredients into a small bowl and let stand in refrigerator for two or more hours to blend flavors.
2. Use as a condiment for whatever you want!

You can use a bit of salt or use a salt substitute as well - I use a dash, which I couldn't find on the food selector! You can also use whole chopped tomatoes, but it doesn't have the same texture and definitely doesn't hold up as well in the fridge.

Serving Size: makes 1 1-cup serving
