Introduction

Tasty, quick and nutritious. Oh, and not at all dull! Tasty, quick and nutritious. Oh, and not at all dull!
Number of Servings: 4

Ingredients

    600g Beetroot
    3 tbsp Olive Oil
    7 tbsp Balsamic vinegar
    150g Roquefort Cheese
    1 tbsp Sesame Seeds, toasted
    4 cups Tossed Salad

Directions

1. Halve or quarter the beetroot
2. Heat oil in a pan, add the beetroot and sauté for 2-3 minutes
3. Add the balsamic vinegar and season with salt and pepper, toss to coat the beetroot in the glaze
4. Transfer to bowl, and either leave to cool, or combine immediately with the cheese and sesame seeds on top of mixed salad leaves.

Serving Size: Makes 4 salads
