Sweet Potato Home Fries

Introduction

Awesome substitute for regular home fries. the sweet potato adds vitamins and minerals and it's great tasting to boot! Awesome substitute for regular home fries. the sweet potato adds vitamins and minerals and it's great tasting to boot!
Number of Servings: 2

Ingredients

    2 Cups chopped sweet potato (peel the potato first or you can use pre-cubed sweet potatoes)
    1.5 cups chopped onions
    1tbsp I can't Believe it's not butter, light (or other preferred margarine - just be sure to note the calories, etc.)
    1/2 tsp Lawry's Seasoned Salt

Directions

1. Heat pan and melt margarine
2. Saute onions until almost caramelized, kind of translucent
3.Add chopped sweet potato and sprinkle with seasoned salt
4. Cook over med-high heat, stirring occasionally until some of the potatoes get browned and a little crunchy. but be sure not to cook too long or the potatoes will get mushy.
