Lauren's No-Chunk Salsa

Introduction

I love the flavor of fresh, home-made salsa but do not like the chunks of tomatoes. So I created this salsa, which has a nice consistency after a quick run in the food processor. Number of Servings: 12

Ingredients

    1 can (14 oz) petite diced tomatoes (I use the kind with green chiles added for extra heat), juice AND tomatoes.
    1 large fresh tomato, quartered, seeds removed
    1 bunch fresh cilantro, roughly chopped (use more or less, depending on taste preference)
    1/4 - 1/2 Sweet yellow onion, roughly chopped or quartered
    4-6 Green onions, roughly chopped

    Juice of one lime, salt, pepper and red pepper flakes (optional) to taste.

Directions

Throw everything in the food processor. Pulse a few times until all ingredients are a similar consistency and the cilantro is broken down. Squeeze lime on top and store in refrigerator in an air-tight container. Let flavors mesh for at least an hour. Keeps for at least a week.

Serving Size: Makes at least 12 1/4 cup servings
