IntroductionThis is the original Juniors Cheesecake as made by my dad who worked 20 years for Juniors Famous Restaurant in Brooklyn, NY. This is the original Juniors Cheesecake as made by my dad who worked 20 years for Juniors Famous Restaurant in Brooklyn, NY.
2 lbs Cream Cheese (4-8 oz packages)
1/2 Cup Splenda
1/4 Cup Splenda Sugar-Blend
1/4 Cup Cornstarch (4 Tbl)
1 Large Egg
1/2 Cup Heavy Whipping Cream
1 Tbl vanilla extract
blend sugar and corn starch together and add to the cream cheese
mix only at first speed, and scrape the mixture from the sides
add the fresh egg and mix, then scrape again
add the heavy cream and scrape again
add the vanilla and scrape again
grease or spray an 8 in.springform cake pan
you can put any cookies or cake crumbs on the bottom of the cake pan
pour the mixture into the cake pan
place the unbaked cheese pan on a sheet and
place in a pre-heated 425 F oven electric (450 if gas).
bake for 25 min. or until it is golden brown
let rest for 4 hours, ENJOY !!!!
