Mixed Berry Sorbet

Ingredients

    2 packages Trader Joes Frozen Berries (Cherry Mix)
    1 cup of water
    2/3 cup Ideal no calorie Sweetener (NOT the packets - the baking substitute. If you use the packets your amounts WILL be different as 1 packet = 2 teaspoons of sugar)
    1 tsp lemon juice (I used fresh)

Directions

In a medium sized saucepan, combine all ingredients. Stirring occassionally, cook until all berries are nice and soft, about 12-15 minutes, remoive from heat and let it cool to room temp, then put it in the refrigerator overnight. (You dont have to, but hte colder you let it get, the better. You can chill it several hours instead of overnight if time is an issue - ive done it both ways)

When thoroughly cooled, puree the berries and all liquid using a blender, a food processor or even a immersion blender. YOu can either strain this mix thru a very fine sieve (to get out any skin/seeds) or leave them intact - your preference.

Refer to your ice cream maker instructions to set the sorbet - and if you dont have an ince cream maker, you can just make ice pops. I have a plastic "pop maker" i got at Target for like a dollar last summer, or go oldschool - dixie cups and a wooden stick!Doesn't really matter - as long as you freeze the mixture :)
