24 cups flour 6 cups superfine sugar 4 cups butter 1 cup lard 2-1/2 cups lemon peel 3 cups golden syrup (light corn syrup) 1/8 pint water 1/1-4 tbs ground ginger 1-1/2 tbs pumpkin pie spice
Rub butter into flour. Mix the spices with the sugar. Mix water with soda and bring to a boil. Slowly pour water mix into syrup. Add Lemon peel. Mix this into boutter & flour add spice & sugar mix. Roll out on a floured surface to 1 inch thickness. Cut into strips or rounds. Bake in a warm over (aprox 350) until done. about 12 minutes. Makes about 34 dozen small cookies.
