Core Shrimp and Rice Casserole

Ingredients

1 12oz package of pre-cooked shrimp
2 tsp olive oil
2 cans mushrooms
1/2 cup chopped onion
3 tbsp cream of wheat cereal
1/8 tsp cayenne pepper
1 1/3 cup almond milk
3 C cooked brown rice
1 C shredded FF cheese, divided
Directions
In a large non-stick skillet, saute shrimp in 1 tsp olive oil for 2-3 minutes. Add the remaining olive oil, mushrooms, and onions and saute until tender. Stir in the Cream of Wheat, and cayenne. Gradually add milk until blended. Bring to a boil; cook and stir for 2 minutes or until thickened. Add the rice and 1/2 cup cheese; stir until combined.
Pour into a 9X13 baking dish coated with non-stick cooking spray. Cover and bake at 325 for 30-35 minutes or until heated through. Sprinkle with remaining cheese; cover and let stand for 5 minutes or until cheese is melted.
