3 cups sliced fresh or frozen rhubarb
1 cup cubed peeled apples
1 cup sliced strawberries
1 cup blueberries
1/3 cup white sugar or Splenda
1/2 tsp. ground cinnamon
1/2 cup all purpose flour (or gluten free flour blend)
1 tsp. baking powder
1/4 tsp. salt
4 TBSP butter or margarine
2/3 cup packed brown sugar (or Splenda Brown Sugar baking blend)
2/3 cup quick cooking oats
In a bowl, combine flour, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Stir in brown sugar and oats. Sprinkle over fruit mixture.
Bake at 350F for 40-50 minutes or until lightly browned.
Serve warm or cold.
Serving Size: makes about 8 1/2 cup servings
