Energy Bars

    1 cup rolled oats
    1/4 cup almond slivers
    1/4 cup sunflower seeds
    1 tbsp flaxseeds
    1 tbsp sesame seeds
    1 cup rice crispies
    1/3 cup crasins
    1/3 cup chopped apricots
    1/3 cup raisins
    1/4 cup peanut or almond butter
    1/4 cup honey
    1/4 cup turbinado sugar
    1/2 tsp vanilla extract
    1/8 tsp salt


Preheat oven to 350 degrees. Coat 9x13 pan with cooking spray. Spread first 5 ingredients on a rimmed baking sheet. Bake 10 minutes, shaking pan halway through. Transfer to large bowl and toss in cereal and fruit.

Combine peanut butter and remaining ingredients in saucepan over med-low heat until mixture bubbles (2-5 minutes). Pour over oat mixture and mix until all ingredients are evenly coated. Transfer to pan and refrigerate for 30 minutes. Cut into bars. store for up to 1 week or in freezer for up to 1 month.
