Pizza Breakfast Quiche/Casserole

Introduction

This is a Pizza twist on the South Beach breakfast casseroles. These freeze and reheat great so it's a wonderful quick & healthy breakfast if you're on the go in the mornings. This is a Pizza twist on the South Beach breakfast casseroles. These freeze and reheat great so it's a wonderful quick & healthy breakfast if you're on the go in the mornings.
Number of Servings: 10

Ingredients

    8 eggs (I used 4 eggs & 4 servings of eggbeaters in NI)
    12 diced grape tomatoes
    small can mushroom pieces
    1 1/3 cup turkey sausage crumbles
    1 cups shredded cheese
    1/2 cup diced onion
    1 cup fat free half and half

    You can also add diced fresh spinach to this and it's delish!

Directions

* cook turkey sausage, onion, mushrooms, and tomatoes (spinach in at end if you use it)
*mix eggs half and half and cheese
* Add sausage mixture to egg mixture and stir quickly to keep eggs from cooking
* spoon into 20 muffin cups or casserole dish
* Bake at 350 for 20 min or till butter knife put in center comes out clean. It takes a lot longer for the casserole dish.

Serving Size: 2 muffin pieces or 1/10 of casserole
