Ingredients

8 oz herbed Chevre (soft goat cheese)
1 large fresh eggplant
Helpful tools:
A grill
Food processor
Directions
Wash the eggplant
Place whole on grill (or in oven)
Roast for a long time (30-45 min) it's done when the skin is turning papery and seperate from the eggplant flesh. Once roasted, pull from heat and peel the skin off. Chop the stem off.
Place the herbed chevre and eggplant into the food processor and blend until smooth. Refrigerate. Eat with crackers.
Serving Size: Makes 8 1-oz servings
