Spinach pie with bacon and sundried tomatoes

Ingredients

    1 pie crust
    2 Tbsp diced oil-packed sun dried tomatoes, rinsed and drained
    1 small onion, chopped
    2 cloves garlic, minced
    1 lb part skim ricotta cheese
    1 cup part skim mozzarella cheese
    2 eggs
    1/2 tsp salt
    1 Tbsp dried basil
    1/4 tsp ground nutmeg
    1/4 tsp black pepper
    3 slices center cut bacon, cooked and crumbled
    1 10oz package frozen spinach, thawed and squeezed dry

Directions

- Heat 1tsp oil from sundried tomatoes in a small skillet. Add onion and garlic and saute until onion is translucent. Cool slightly.
- Combine ricotta cheese, mozzarella, eggs, salt, and spices, mixing well. Fold in spinach, bacon, sundried tomatoes, and onion mixture.
- Spoon evenly into pie crust in pie plate. Bake for 30-40 minutes at 375 degrees F until center is set.
