Introduction

Here is a recipe for quesadillas using leftover grilled chicken & other ingredients I have.
(Wish I had tomato, too!)

Number of Servings: 2

Ingredients

    2 La Banderita flour Tortillas (these tortillas have the lowest fat)
    2 oz Cabot Cheddar
    4.5 oz grilled chicken breast slices
    2 cup sauteed baby spinach
    mushrooms
    olive oil to sautee spinach & mushrooms

Directions

Cut up previously grilled chicken
sautee Spinach & mushrooms separately in olive oil
remove from heat

Spray Pam on hot skillet put down a tortilla, add cheese, chicken , spinach & mushrooms.
add more cheese & top with second tortilla.

Cook until golden brown on both sides , & cheese is melty.
Enjoy!
