Mandarin Mu Shu Pork

Introduction

This takes about 30 minutes start to table. Tortillas provide an alternative to Mandarin pancakes. Prepackaged coleslaw mix can be used to save time shredding vegetables. Ingredients

    4- 8" Tortillas
    2 tbsp Reduced Sodium soy sauce
    1 tsp Cornstarch
    6 oz pork tenderloin
    1 tsp cooking oil
    1/8 tsp ground red pepper (or more to taste)
    1 clove garlic, minced
    1 c shredded cabbage
    1/2 c shredded carrots
    1 c fresh sprouts (bean, sunflower, alfalfa)
    1/4 c sliced green onions (optional)
    1/4 c bottled plum sauce

Directions


1) In a medium bowl combine soy sauce and cornstarch. Trim fat from pork. cut meat into bite-size pieces. Add the meat to the soy mixture and toss to coat. Let stand at room temperature for about 10 minutes.

2) Pour cooking oil and red pepper into a medium non-stick skillet. Heat skillet over medium-high heat. Add meat and soy mixture to heated pan. Stir-fry meat and garlic in oil for 2-3 minutes until cooked on one side. Then add 1/2 c of cabbage and 1/4 c of carrots, the sproats, and onions. Stir-fry for 4-5 minutes until meat is cooked. Remove from heat.

3) Meanwhile, heat tortillas in microwave for 15-20 seconds or in oven at 350F for 10 miinutes until warm.

4)Place the remaining cabbage and carrot mixture in the centers of the 4 tortillas. Spoon the pork stir-fry mixture over the cabbage. Divide plum sauce between 4 tortillas. Fold and wrap tortillas and serve.
