Introduction

A different take on an old favorite. Great for potlucks and parties, and SO easy! A different take on an old favorite. Great for potlucks and parties, and SO easy!
Number of Servings: 30

Ingredients

    5# russet potatoes, washed, partially peeled
    6 slices bacon, fried and crumbled
    1 small onion, peeled and chopped
    16 oz sour cream
    1 c shredded sharp cheddar cheese
    1 tbsp Lawry's seasoned salt

Directions

Cut the potatoes into approximately 3/4 inch cubes. Place in a pot of water and bring to a boil and cook until the cubes are soft but not mushy. Drain. Add the rest of the ingredients and mix well but don't overhandle so that the potatoes lose their shape. There should still be chunks of potato visible. Put into serving dish and chill until served. Garnish with shredded cheese, bacon crumbles, and chopped green onions or sprigs of fresh curly parsley.

Serving Size: Makes approximately 30 servings (1/4 cup)
