chicken broth, canned, less/reduced sodium, 6 cup
Olive Oil, 1 tbsp
2 Carrot, chopped
2 Celery stalk, chopped
1 lg Shallot, chopped
Garlic, 3 cloves
Steel Cut Oats, dry, 2 cup
White Wine, 1/2 c
1 c shredded, 2% Cheddar Cheese
Heat oil in a large sauce pan over med-high heat. Add carrots & celery; saute until lightly browned. Add shallots & garlic, continue to cook until translucent. Add oats, stirring constantly until toasty. Add wine, cook for 30 seconds.
Add hot broth 1 cup at a time, stirring between additions until absorbed. Continue until all broth is used.
Add cheese and stir well.
Remove from heat and allow to cool for about 5 minutes.
Serve hot, topped with a poached egg (optional, nit included in NI)
