Zucchini Kimchi

Submitted by: TRAVELNISTA

Introduction

A great way to use all of that bumper crop of zucchini you either grow yourself or are given to you by your neighbors. You can make this as hot and spicy as you like by adding more hot garlic paste. Ingredients

    2 large raw zucchini

1/2 fresh squeezed juice of 1 Lemon
    2 tsp. Hot Garlic Sauce
    Sea Salt to taste

Directions

Wash your zucchini and cut the ends off. Slice thin and place in bowl.

Slice half of a small onion into paper thin slices and place in bowl.

Add the rest of the items to bowl and mix in really well.

You can eat as is but it tastes much better the longer the flavors marinate. I usually leave mine on the counter for at least an hour. I do not put into the refrigerator because I don't want the sesame oil to congeal.
