*Green Bean, Fresh, 4 cup
Hearts of Palm, 1 (14.5 oz) can, drained
Red Ripe Tomatoes, 2 medium whole (2-3/5" dia)
*Red Onion, Fresh, .5 cup
Parsley, .5 cup
Feta Cheese, 2 oz
Dollbabe56's SS Red Wine Vinegarette (1 recipe)
Pepper, black, .25 tsp
Directions
Bring a saucepan of salted water to a boil. Add the green beans and boil about 3 - 4 minutes, until tender. The beans will change from light to dark green. Drain and plunge the beans into a bowl of ice water. The ice bath stops the cooking process, sets the flavor, and helps the beans retain their dark green color. Slice the blanched green beans on the diagonal into 1-inch pieces and place in a large bowl.
Slice the hearts of palm on the diagonal into 1-inch pieces. Add the hearts of palm, tomatoes, onions, parsley, and feta cheese to the green beans. Toss with the Red Wine Vinaigrette. Season with additional salt and freshly ground pepper.
