Yellow Squash Casserole w/ Sausage

Number of Servings: 6

Ingredients

    8C sliced crookneck squash (about 2 pounds)
    1Tbs water
    16 ounce LIGHT breakfast sausage
    1C chopped vidalia onion
    2 cloves garlic, minced
    3 Wasa flatbreads, crushed
    3 oz provolone cheese, cubed or shredded
    1/4 t salt
    1/4 t pepper
    1 10.75oz can cream of mushroom soup

Directions

Prep all produce and wasa crackers.

Place sliced squash in a large bowl, cover with clingwrap and steam for about 5-7 minutes.

While the squash is steaming, brown sausage, onion and garlic.

Combine all but 1/2 of the crushed wasa crackers in a large bowl and then spread into a casserole dish. Top with remaining crushed Wasa. Bake for 30 minutes.
