1/8 cup diced onion
1 garlic clove, minced (I like my food garlicky)
1/2 tbsp Smart Balance Light
1/2 tbsp flour
2/3 cup of fat free half and half
3 Laughing Cow Swiss Cheese Wedges, cubed
1/3 tsp salt
1/2 package of frozen spinach, thawed
2 1/2 tbsp of shredded Parmesan cheese (use the good stuff)
2. Stir in the flour until it is well blended and then gradually whisk in the FF half and half.
3. Bring to a boil and then reduce heat to medium low. Cook for about 2 minutes until the sauce begins to thicken.
4. Add the wedges, salt, nutmeg, and pepper. Stir until the cheese melts and is nice and smooth. Stir in the spinach and 2 tbsp on the Parmesan cheese. Heat though. Sprinkle with remaining 1/2 tbsp of Parmesan cheese.
5. Stuff your face!
