Introduction

These are sure to be a crowd pleaser, and no one would guess that these decadent truffles contain a mere 100 cals each! These are sure to be a crowd pleaser, and no one would guess that these decadent truffles contain a mere 100 cals each!
Number of Servings: 20

Ingredients

    5 ounces dark chocolate
    1/4 cup skim or soy milk
    8 ounces non-fat cream cheese
    1/2 cup dried cranberries
    1/4 cup toasted walnuts, finely chopped
    3/4 cup finely chopped pecans
    1 tsp lemon zest
    1 tsp cinnamon or allspice
    3 tbsp unsweetened cocoa powder

Directions

In a double boiler, combine dark chocolate and milk. Melt over low heat, stirring constantly. Remove from heat and allow mixture to cool slightly.

In a bowl, beat cream cheese until smooth. Add chocolate, cranberries, walnuts, lemon zest, and cinnamon or allspice. Mix well.

Pour cocoa powder onto a small plate. Using two spoons, form mix into balls and refrigerate until balls have hardened so they are easier to handle. Lightly roll each one in cocoa powder to coat. Place balls in paper muffin cups. Chill until ready to serve. Refrigerated truffles will keep for 2 weeks.
