Introduction

Number of Servings: 6

Ingredients

    1 1/2 cups Trader Joes Harvest Grain mix
    1 1/4 cup Stock (can use chicken, beef or vegetable)
    5-6 baby carrots chopped
    5 broccoli florets chopped
    10 pea pods whole
    2-3 onion slices chopped
    5 fresh basil leaves chopped
    a squeeze of lemon

Directions

Cook Harvest grain mix according to package directions.
In a separate saute pan, saute carrots, broccoli and onion until softened, add a little stock, add pea pods and cook until soft tender. Once cooked, chop up pea pods and toss with Harvest grain mixture. Chop up basil and cherry tomatoes, toss with lemon juice--can eat while still warm, or after chilled--good both ways!

Serving Size: Makes 6 1/2 cup servings
