Creamy Chicken Pasta

Introduction

This is something I threw together so the measurements may not be perfect. It's a delicious, tangy chicken dish. I forgot to get a photo and it was eaten too fast to go back for one lol. Ingredients

    1 lb Boneless chicken breast
    1 box Ronzoni Healthy Harvest Whole Grain Rotini
    3 tbsp Land O Lakes light butter w/canola oil
    2 tbsp Extra virgin olive oil
    1 cup chopped Green peppers
    1/2 cup Roasted red peppers
    1 cup chopped Onions
    1/2 cup Grated parmesan cheese
    1/2 cup Lemon juice
    1/2 cup Lime juice
    1/4 cup Soy sauce
    3 tbsp Kraft Reduced Fat Mayo w/Olive Oil (cracked pepper flavor)
    3 tbsp Minced garlic

Directions

Saute onions, peppers and garlic in olive oil. Coat a separate pan with cooking spray and cook diced up boneless chicken breast. After chicken is fully cooked add it to the saute along with butter, juices, soy sauce, cheese and mayo. Stir well to blend in the mayo. Let set on low flame while pasta cooks according to instructions on the box. Drain pasta and combine all ingredients.

Serving Size: Makes about 6-7 servings
