Meatloaf

Introduction

My mom always made meatloaf with oats instead of bread crumbs. I've tried it both ways, and prefer the oats by far! For a smaller meatloaf just cut the ingredients in half. Number of Servings: 10

Ingredients

    3 pounds lean ground beef
    1 cup oats
    2 eggs
    1 cup ketchup, divided

Directions

Preheat oven to 375 degrees.

Combine ground beef, oats, eggs, and 3/4 cup of the ketchup. Mix by hand until well blended.

Shape into loaf and place in ungreased baking pan. Spread remaining ketchup along top and sides of loaf. Tent with aluminum foil (do not press foil down).

Bake at 375 degrees for 50 minutes. Remove foil and continue baking 5-10 minutes, depending on your preference.

I slice mine pretty thick and usually get about 10 servings.

This works well with mushrooms, green peppers, and onions too - just make sure they are finely diced! Add salt, pepper, or other spices to suit your taste. Enjoy!
