Homestyle Pot Roast

Ingredients

1.75 pounds chuck roast
8oz chopped onion
8oz chopped celery
8oz baby carrots
16oz red new potatoes
4 cups low-sodium chicken broth
2 cloves garlic
Salt & Pepper to taste
Directions
Brown meat over high heat until seared on all sides. Add onion and celery, cook until onions start to become translucent. Add broth and simmer for 30 minutes. Add carrots and simmer for an additional 10 minutes. Add new potatoes and simmer for about 30 minutes until potatoes are fork tender.
Remove solids from liquid. Mix cornstarch in cold water, stirring until dissolved. Whisk into liquid and bring to a hard boil until thickened and reduced.
Serving Size:Â 4 oz of meat and 2oz of each veggie + broth
