1.75 pounds chuck roast
8oz chopped onion
8oz chopped celery
8oz baby carrots
16oz red new potatoes
4 cups low-sodium chicken broth
2 cloves garlic
Salt & Pepper to taste
Remove solids from liquid. Mix cornstarch in cold water, stirring until dissolved. Whisk into liquid and bring to a hard boil until thickened and reduced.
Serving Size:Â 4 oz of meat and 2oz of each veggie + broth
