16oz Chicken Breast, no skin 1 C Spinach, Fresh, packed 1/2 C Fat Free Sour Cream 1 tsp Minced Garlic 1/2 tsp Black Pepper 1/2 C Parmesan Cheese, Grated 1/2 C Low-fat(1%) Cottage Cheese, not packed 4 Tsp Hellman's Real Mayo
Preheat 350 and spray 8X8 pyrex baking dish; SAUCE: in separate bowl mix together sour cream, mayo, garlic, pepper, parmesan and cottage cheese; In another separate bowl, combine chicken and spinach and blend in 1/4 of sauce; place in bottom of greased baking dish; Spread remaining sauce over top and bake uncovered for approx 40 min or until top is browned and crispy.
