Lemon Meringue Pie

Number of Servings: 8


    Flour, white, 1.5 cup (remove)
    Shortening, .5 cup (remove)
    Salt, 1 tsp (remove)
    Granulated Sugar, 1.5 cup (remove)
    Cornstarch, 3 Tablespoons
    *Flour, white, 3 Tablespoons
    Egg, fresh, 3 large (remove)
    Margarine like spread, approximately 60% fat, 2 Tablespoons
    *Lemon Juice, .5 cup (remove)
    Granulated Sugar, 6 Tablespoons


Pulse flour, shortening, & salt in food processor. Add 7 Tablespoons cold water one @ a time.

Roll into pie shape on floured surface. Put in pie pan, & bake @ 450' for 10 min.

In a microwave proof bowl stir 1.5 cups sugar, 3 T cornstarch, & flour. Add 1.5 cups hot water. Microwave 3 min. Stir. Repeat till thickened, & bubbly.

Beat 3 eggs yolks. Add small amount hot mixture. Pour back into hot mixture. Add 1/2 cup lemon, & 2 T margarine. Microwave 3 more minutes.

In beater bowl beat 3 egg whites @ fastest speed till stiff. Add 6 T sugar one spoon @ a time.

Pour lemon mixture into baked pie shell. Put meringue on top sealing edges. Bake @ 350' 12 min.
