Spinach, fresh, 3 cup
Egg, fresh, 8 large
*Potato, raw, 4 medium (2-1/4" to 3-1/4" dia.)
Carrots, raw, 2 large (7-1/4" to 8-1/2" long)
*Onions, dehydrated flakes, 3 tbsp
Red Ripe Tomatoes, 1 Italian tomato (Roma)
Cottage Cheese, 2% Milkfat, 16 oz
Garlic (minced), .25 cup
Salt, pepper, cayenne, Tabasco, or other spices (not included in nutritional info)
Pour into 2 pie plates (I think mine are 9"?) that are coated in pan spray. Bake at 350F for 45-ish minutes, or until the center is set and no longer shiny.
My kids love this.
