Mexican chicken casserole

Introduction

Number of Servings: 6

Ingredients

    2 chicken breasts, cooked and chopped
    1 small onion, chopped
    1 small can of enchilada sauce
    1 small bottle of taco sauce
    1 can low sodium black beans
    1 small can corn
    1 cup 2% sharp cheddar cheese
    sun dried tortillas (8") - 4
    small can of chili peppers

Directions

Saute onion, add chicken, taco sauce, rinsed beans, corn, and peppers. Heat together. Spray 8x8 pan, cover bottom with enchilada sauce. Lay down tortilla, put chicken mixture on top of tortilla, sprinkle with cheese. Repeat layers two more times. After last layer, tear up tortilla and put on top and cover with enchilada sauce. Sprinkle remainder of cheese on top. Bake at 350 for 20 min.

Serving Size: Makes 6 1-cup servings
