Red Curry Chicken Wings

Introduction

Ingredients

    1/2 tbsp Thai’s Kitchen Red Curry Paste
    2 tbsp Olive Oil
    14 Chicken Wings
    Kosher Salt
    Pepper, black
    1/2 cup Coconut Milk
    2 tsp Fish Sauce
    3 tsp Splenda Brown Sugar Blend

Directions

Preheat oven 450 and place rack nearest to top.

In a large bowl whisk 1/2 tsp of curry paste with the oil. Add the chicken, season with salt and pepper and toss to cover.
Spread the chicken on a large rimmed baking sheet and bake for 25 min, turning once, until cooked through and just starting to brown. Remove from oven. Preheat the broiler.
Meanwhile, in a medium saucepan, combine the coconut milk, fish sauce, brown sugar and the remainder of the curry paste and bring to boil. cook over high heat, stirring occasionally, until slightly thickened, about 3 minutes.
Transfer chicken to a large bowl. at the coconut-curry sauce and toss to coat. Return to baking sheet, pouring excess sauce over it. broil for 5 minutes, turning once, until browned.
transfer the chicken to a platter and serve with lime wedges.
