Number of Servings: 4

Ingredients

    Red Potato, 1 lb 1 inch cubed
    Broccoli, fresh, 1.5 cup, chopped
    2% Velveeta cheese, 4 oz 1/2 inch cubed
    Milk, nonfat, .25 cup
    Whole Grain Mustard, 1 Tbsp
    Yogurt Nonfat Plain, .75 cup
    Green onions .5 cup
    grated cheddar cheese, 1 cup

Tips

You can use frozen broccoli, just defrost first.


Directions

Preheat oven to 375

In a large pot boil potatoes until just fork tender.

While potatoes are boiling place Velveeta and milk in microwave safe bowl. Melt velveeta in microwave heating for 30 seconds at a time, stirring and heating again.

Add mustard and yogurt to cheese mixture and stir well.

Drain potatoes. Combine in a 9x11 sprayed baking dish the potatoes, broccoli and green onions. Pour cheese mix over potato mix, cover and bake for 30 mins, until hot and bubbly. Uncover, top with cheddar cheese, return to the oven and cook for ten more minutes until cheese is melted.

Allow to cool a couple minutes before serving.
