Pomegranate Lime Vinaigrette

Introduction

This is a wonderful substitute for the traditional balsamic dressings. It is also really good on most middle eastern salads instead of the traditional Lemon/olive oil dressing. You can find sugar free pomegranate syrup at Cost plus and most other store that sell coffee syrups. You can also order directly online from torani, DaVinci, or Artisan syrup companies. ** you could also substitute pomegranate molasses- but there will be more calories per serving. Ingredients

    slightly less that 1/3 cup FRESH aqueezed lime juice
    1/4 cup pomegranate vinegar
    1/4 cup sugar free Pomegranate syrup
    1 teas salt
    2 cloved garlic
    piece of Jalapeno about the size of the last joint of your pinkie( .25 of a pepper
    4-5 Tbls olive oil

Directions

In a mortar and pestle grind the garlic, pepper, and salt into a paste.( or just press the garlis through a garlic press into a jar and add the rest of the ingredients accordingly. Add lime juice and swish to loosen paste from pestle. Add Vinegar and syrup and whish to mix well. Pour 4 Tbls oil in a thin stream while whisking. If too tart- add additional Tbls oil. Adjust the salt to your liking. Add 2 Tbls sumac herb and mix well. ** If you cant find sumac- you can use grated lemon zest instead.

I just made this again and didn't have the pomegranate vinegar or jalapeno- so I used red wine vinegar instead- I had to opt for the higher amount of oil suggested( 5 Tbls) instead of 4 .... and also add 2 teas of splenda to offset the higher acid in the red wine vinegar. I also substituted a few shakes of tobasco sauce instead of the pepper and it turned out great!
Serving Size: makes 8 servings of 2 Tbls each
