Introduction

Like a muffin and a pancake! You could eat these with syrup, but they're moist and flavorful enough to just tear apart and eat with your hands. Use whatever whole grains you have on hand! Ingredients

    1 1/4 C rolled oats
    1 1/4 C silk unsweetened almond milk

    1 egg
    1 C mixed whole grains (see note)
    2 tablespoons ground flax seed
    3 tablespoons splenda (or other cup for cup sweetener)
    1 tablespoon olive oil
    1 teaspoon cinnamon
    1/2 teaspoon nutmeg
    1/2 teaspoon ground ginger

Directions

Mix oatmeal and milk in a medium mixing bowl, and let soak for about 5 minutes.

Mix in the rest of the ingredients. batter will be very thick.

Heat a skillet to medium, and spray with EVOO spray.

Measure 1/4 C batter. Scrape it onto the skillet with a spoon, then flatten it out to about 1/2". Cook over medium-low heat. These are very dense and need to cook slowly so the inside will cook before the outside burns.

NOTE on whole grains:
I used whole wheat flour, rye flour, wheat germ, and oat germ. I just put a spoonful each of the rye and germs into my 1C measure, then filled the rest with whole wheat. This recipe works just fine with any combination, or with just whole wheat.
