Introduction

This recipe was sent to me by BAMATEACHER . Micki wrote about it in one of her blogs and it just sounded so good, refreshing but different.

The original recipe came from Summer Celery Salad (Purely Delicious magazine, Summer 2008) Happy Micki reads this magazine and shared it with us.

Number of Servings: 2

Ingredients

    6 stems celery
    4 radishes
    1/4 sweet apple
    1/4 cup + 1 Tbsp sunflower seeds
    3 Tbsp red bell pepper
    2 Tbsp cilantro (I leave out, don't like)
    2 basil leaves
    1 Tbsp olive oil
    1/2 medium lime, juiced
    pinch of sea salt

Directions

Roughly chop veggies. Place all ingredients in a food processor and pulse chop until desired texture is reached. Stuff in avocado, sweet bell pepper, heirloom tomato, or serve on a bed of greens.
