Fry Aloo

Ingredients

5 medium potatoes,
1 small onion (sliced)
3 cloves garlic (crushed)
1 scotch bonnet pepper
4 tablespoons vegetable oil
dash black pepper
1 teaspoon salt
Directions
Peel the potatoes, then wash and slice about ⅛ to ¼ inch thick. Peel and crush the garlic, slice the onion and pepper. Set aside.
In a heavy pot, add the oil and allow to heat on medium to high heat. As the oil heats up add the onion, garlic and pepper and allow to cook for a couple minutes. When the onions start turning brown, drain the sliced potato add them to the pot and mix.
Turn down the heat to medium-low and cover the pot. Allow to cook covered for about 20 minutes stirring every 5 minutes. Potatoes will begin to turn brown and stick to the bottom of the pot. Continue stirring and scraping up the brown bits until cooked.
