Mable Hoffman's Traditional Bolognese Sauce

Introduction

Recipe found in Mable Hoffman's all new Crockery Favorites - published by Fisher Books 1991. Number of Servings: 9

Ingredients

    1 lb ground veal, pork and beef
    1/2 lb italian sausage - casing removed
    1 28oz can diced tomatoes in juice
    2 6 oz cans tomato paste
    2 carrots -finely chopped
    1 lg stalk celery- finely chopped
    1 lg onion -finely chopped
    1 lg red bell pepper- finely chopped
    4 cloves garlic- finely chopped
    2 T fresh basil - finely chopped
    2 T fresh oregano- finely chopped
    2 T fresh parsley - finely chopped
    2-3 bay leaves
    ground black pepper
    6 oz dry red wine
    1 tsp sugar
    black pepper to taste

Directions

cook meats until brown and finely crumbled, rinse off fats with hot water
chop all vegetables - I use a food processor - consistency = small rice sized pieces
place meat and vegetables in slow cooker
add canned diced tomatoes, tomato paste, wine and sugar
chop basil, oregano and parsley until fine and add
add sugar, bay leaf, black pepper and wine and stir
cook on low setting for 6-7 hours

Serving Size: Make 9 one cup servings
