Low Carb Chia Seed Mock Tapioca Pudding

Introduction

Chia seeds are sold in most health food stores and are a great source of healthy fats. The seeds gel in water to create little balls which mimick tapioca pearls. Number of Servings: 1

Ingredients

    8 ounces of Almond Breeze Unsweetened Vanilla
    2 Tablespoons DaVinci Sugar-Free Vanilla Syrup
    1/4 teaspoon vanilla extract
    1 and 1/2 Tablespoon of chia seeds, whole (4 teaspoons)


Directions

Add all ingredients to a container with a tight lid (like a shaker or Mason jar) and shake a few seconds. Refrigerate at least an hour and enjoy. If it's too watery, try adding another teaspoon of Chia.
