This is a recipe from Food.com that I stumbled upon. It is a blank canvas that can be embelished with nuts, chocolate chips, died fruit or fresh fruit that I add to my tracker separately according to what I have used in the batch. Ingredients

    2 cup white flour
    1 cup white sugar or 1/2 cup white and 1/3 cup dark brown sugar
    1 cup milk
    2 eggs
    4 tbsp oil
    1 packet baking powder or 1 tsp baking soda and 1 tsp citric acid
    1/4 tbsp salt

Directions

1. Preheat oven and prepare the pan and liners if using any.
2. Mix the flour, sugar, salt, baking powder, any dry spices (like mahleb, vanilla powder, cocoa or cinnamon) and additions (like dried fruit, chocolate chips or nuts) in a bowl and make a well in the middle.
3. In a separate bowl mix the milk, egg, oil and any liquid spices (like vanilla or other extracts).
4. Pour the wet ingredients into the well and briefly mix with a fork into a lumpy dough. Do NOT overmix.
5. Pour into muffin pan and top with nuts or fresh fruit.
6. Bake 25-30 minutes until golden.
