Introduction

Very simple and hearty soup with only 4 ingredients. Very simple and hearty soup with only 4 ingredients.
Number of Servings: 8

Ingredients

    3 leeks - green and light green bits chopped up
    4 peeled potatoes, chopped
    2 tbsp butter
    2 cans vegetable broth
    Salt and pepper to taste

Directions

Sautee chopped leeks in butter until soft. Add chopped potatoes and broth to the leeks. Bring to a boil and then simmer until potatoes are soft.
