Stuffed marrow

Introduction

Tasty all in one meal requiring no accompaniment. Tasty all in one meal requiring no accompaniment.
Number of Servings: 2

Ingredients

    1 small marrow
    4oz extra lean mince beef
    1 small onion
    2 cloves of garlic
    1 cup brown rice
    half tablespoon olive oil
    3 tablespoons grated parmesan cheese
    salt, pepper and chilli powder to taste

Directions

Heat oil in a saucepan over a medium heat
Add onion and soften
Add garlic
Add mince beef and saute till brown
Add rice and tomatoes and a little water if needed
Add chopped pepper
Season to taste
Simmer for 15 mins

Pre-heat oven to 200C
Half marrow lengthwise and remove seeds
Fill with tomato, mince and rice mixture
Top with parmesan cheese
Wrap halves individually in foil
Cook in oven for 40 mins

Unwrap , serve and enjoy!

  • This is very similar to mine, I add a little bisto. But how much tomatoes do you use? I usually use 1 can diced. Just wondering if use the same? - 8/15/13
