Vegetarian "Chicken " Salad/GF

Introduction

Use as salad or sandwich. Use as salad or sandwich.
Number of Servings: 7

Ingredients

    2 cups Water
    2 cups TVP
    2 cubes Vegetarian “Chicken” bullion (I use CelifibR)
    ½ cup Green Onions (chopped fine)
    ½ cup Celery (chopped fine)
    ½ cup Green Peppers (chopped fine)
    ¼ cup Pickle Relish
    3 Eggs Hard Boiled (Chopped Fine)
    2 tbsp Paprika
    3 tbsp Poultry Seasoning (or seasoning preferences)
    8 tbsp Low Fat Mayo

Directions

Dissolve bullion in a small amount of boiling water. Add enough water when dissolved to make 2 cups. Bring to a boil and add TVP, Paprika, and poultry seasonings. Stir to moisten and set aside to cool.

When cool add the remaining ingredients.

Refrigerate before serving.


Serving Size: Makes about 7 sandwiches or 8 salads
