Chicken Teriyaki Bowl

Introduction

I like this one because you make teriyaki from scratch. None of the weird/processed ingredients in commerically sweetened teriyaki. It is high in Sodium though, so if you are watching your intake, you might want to try low/reduced sodium teriyaki marinade. I like this one because you make teriyaki from scratch. Ingredients

    3/4 cup long grain brown rice, cooked
    1/2 raw chicken breast, cubed
    1/2 cup Kikoman Teriyaki Sauce and /Mariande
    1/2 cup water
    Less than one shake of Garlic Salt (optional)
    1/8 tsp Black Pepper (preferably fine-ground)
    2-1/2 Tablespn Brown Sugar
    1 cup mixed frozen vegetables (Calculated with peas/corn/carrots)
    1 sq. foot aluminum foil

Directions

1.Put rice in the bottom of your dinner bowl. Set aside.
Combine raw chicken and mixed veggies on top of aluminum foil. Crunch up the sides of the aluminum square to make a "boat" (this way sauce won't go everywhere when you add it) Set this aside also. Preheat oven to 350 degrees.
2. Combine teriyaki and water in nonstick saute pan; begin heating on high
3. Once mixture has some warmth in pan, begin mixing in brown sugar with a wooden spoon or spatula, one tbsp at a time. Add garlic salt and/or pepper, as desired.
4.Cook for 8-10 minutes, stirring almost constantly. Allow water to evaporate until consistancy of sauce is nice and sticky
5. Scrape sauce from pan directly onto mixed veggie/raw chicken mixture
6. Close up aluminum foil to make a packet. Place in 350 degree oven for 10-15 minutes (until chicken is cooked through and veggies are hot)
7. Empty contents of aluminum foil over rice, mix, and serve
